Delicious family-friendly honey miso salmon - perfect for entertaining.
Ingredients:
  • 75.00 gm white miso paste
  • 89.38 gm honey
  • 20.00 gm mirin seasoning
  • 42.00 gm soy sauce
  • 1.2kg boneless side of salmon, skin on
  • 81.68 gm wasabi-flavoured Japanese-style mayonnaise
  • Toasted sesame seeds, to serve
  • Thinly sliced green onion, to serve
  • Coriander leaves, to serve
  • Salad leaves, to serve
  • 125.00 ml rice wine vinegar
  • 2.40 gm sea salt flakes
  • 1 Lebanese cucumber, thinly sliced
  • 1/2 small red onion, thinly sliced
Instructions:
  • Prepare a tantalizing Cucumber Pickle by combining vinegar, sugar, and salt in a glass or ceramic bowl. Stir well until the sugar completely dissolves. Gently add in cucumber and red onion, mixing them together. Let the flavors meld for 2 hours, remembering to mix every 30 minutes.
  • In a jug, blend miso paste, honey, mirin, and soy sauce, setting aside one-third of the mixture.
  • Lay the salmon skin-side down in a spacious shallow glass or ceramic dish. Brush it all over with the remaining miso mixture and cover. Refrigerate for 1 hour.
  • Preheat your oven to 200C/180C fan-forced and line a baking tray with baking paper. Place the salmon on the tray and bake for 20-25 minutes, or until cooked to your desired level of doneness.
  • Preheat the grill to high heat. Brush the salmon with the miso mixture you set aside earlier. Grill for about 5 minutes until nicely charred.
  • Pat dry the pickles. Coat the salmon with sesame seeds, green onion, and coriander. Serve with pickles, mayonnaise, and salad leaves.
