Ingredients:
  • 12 ounces extra-firm tofu
  • 1 tablespoon vegetable oil
  • 1/4 cup sliced green onions
  • 3 tablespoon white miso paste
  • 2 cloves minced garlic
  • 1 tablespoon vegetable stock base
  • 1 tablespoon grated fresh ginger
  • 11/2 cups cooked rice vermicelli noodles
  • 1 cup thinly sliced shiitake mushrooms
  • 1 cup thinly sliced baby bok choy
Instructions:
  • Slice tofu into 1/2-inch planks, then cut into cubes. Heat oil in a large skillet over medium-high heat and cook tofu until golden, about 6 to 8 minutes, flipping halfway through.
  • Combine green onions, miso paste, garlic, stock base, and ginger in a small bowl, then transfer the mixture evenly into 3 microwave-safe pint-size canning jars with lids.
  • Arrange a beautiful array of rice vermicelli noodles, tofu, mushrooms, and bok choy in an enticing display. Cover and chill for up to 5 days. When ready to enjoy, follow the "Heat and Eat" instructions, and top with freshly sliced green onions for a final touch of flavor.
