Cozy up with a quick and delicious miso noodle soup in just 15 minutes.
Ingredients:
  • 100g miso
  • 180g ramen noodles
  • 200g shiitake mushrooms, thinly sliced
  • 297g firm tofu, cut into 1cm pieces
  • 4 spring onions, thinly sliced diagonally
Instructions:
  • In a large saucepan over high heat, mix the miso paste with 8 cups (2L) of water until it comes to a boil.
  • Lower the heat to medium. Introduce the ramen noodles and mushrooms, and cook while occasionally stirring for 5-7 minutes, or until the noodles are tender.
  • Divide the noodle mixture into serving bowls, then garnish with tofu and sliced spring onion. Enjoy right away.
