Spicy Miso Chow Mein Noodles

Spicy miso chow mein noodles with rich umami flavors, reminiscent of Alfredo pasta.
Ingredients:
  • 15 ounces chow mein noodles
  • 3 cloves minced garlic
  • 2 red Thai chili peppers
  • 3 tablespoons white miso paste
  • 0.75 cup low-fat milk
  • 0.75 cup heavy cream
  • 1 tablespoon Sriracha sauce
  • 2 teaspoons everything bagel seasoning
Instructions:
  • Boil a big pot of water. Cook chow mein noodles over medium heat as per package instructions until al dente, about 4 to 5 minutes. Drain and set aside.
  • In a large skillet, melt butter over medium heat. Add minced garlic and one whole chili pepper, stir until fragrant for 1 to 2 minutes. Finely chop the remaining chili pepper and add it to the skillet. Mix in the miso paste until it breaks down. Pour in the milk, cream, and Sriracha. Cook and stir until the sauce thickens for 3 to 5 minutes. Remove and discard the whole chili pepper before serving.
  • Toss the cooked noodles with the sauce until well coated. Serve in 6 individual dishes and sprinkle with everything seasoning blend.
