Spicy Roasted Chicken Thighs with Miso and Ginger

Spicy ginger miso paste adds a bold kick to roasted chicken thighs.
Ingredients:
  • 2 pounds boneless, skinless chicken thighs
  • 5 cloves garlic, roughly chopped
  • 1 (2 inch) piece fresh ginger, peeled and chopped
  • 1 medium lemon, zested
  • 3 tablespoons miso paste
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon chili-garlic sauce
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and gently pat dry the chicken thighs before placing them in a spacious bowl.
  • In a food processor or small chopper, combine garlic, ginger, lemon zest, miso paste, vegetable oil, sesame oil, rice vinegar, soy sauce, and chili-garlic sauce. Blend until a saucy red paste forms.
  • Pour the sauce over the chicken, ensuring every piece is thoroughly coated. Arrange the chicken in a single layer on a large baking sheet.
  • Roast in the preheated oven for 15 minutes, then flip and roast for an additional 15 minutes until fully cooked. Ensure the center is no longer pink and juices run clear, with an internal temperature of at least 165°F (74°C) when checked with a thermometer.
  • Take out of the oven and allow to rest for 5 minutes before serving.
