Delicious jarred soup - a convenient and clever twist!
Ingredients:
  • 1/2 x 150g packet shelf-stable ramen noodles
  • 82.50 ml small broccoli florets
  • 1/2 carrot, cut into long thin strips
  • 5 snow peas, trimmed, cut into thirds
  • 50g Japanese teriyaki marinated tofu, cut into cubes
  • 1/2 green onion, sliced
  • 24.00 gm white miso paste
  • 1cm piece fresh ginger, finely grated
Instructions:
  • Create beautiful layers of noodles, broccoli, carrot, snow peas, tofu, green onion, miso paste, and ginger in a 3-cup glass jar. Seal tightly with the lid and chill in the refrigerator.
  • To serve: Add 1 1/2 cups of boiling water to the jar and mix until the miso paste dissolves. Close the lid and let sit for 2 minutes until the vegetables are tender. Serve hot.
