Create a quick, no-churn ice cream in 20 minutes using a simple bag, ice cubes, and rock salt - no ice-cream maker needed!
Ingredients:
  • 300ml ctn thickened cream
  • 80ml (1/3 cup) milk
  • 110 g (1/2 cup) caster sugar
  • 4.40 gm vanilla extract
  • Ice cubes, to chill
  • 150g (1/2 cup) rock salt
  • Lemon curd, to drizzle
Instructions:
  • In a large sealable plastic bag, mix together the cream, milk, sugar, and vanilla. Gently press down on the bag to evenly distribute the sugar.
  • Fill a 4L (16 cup) airtight plastic container halfway with ice cubes, then sprinkle half of the salt over the ice. Place the sealed plastic bag on top of the ice, and cover it with more ice and the remaining salt.
  • Cover the container and shake vigorously for 5 minutes or until fully combined, holding at both ends for better control.
  • Uncover the soft serve, ensuring it has thickened while remaining soft. Cut off one corner of the bag.
  • Fill a piping bag with lemon curd using a fluted nozzle. Alternate piping layers of lemon curd and soft serve until you run out of soft serve.
  • Transfer the luscious soft serve mixture into petite glasses, then chill in the freezer for 10 minutes to achieve a perfect firmness. Serve promptly for utmost enjoyment.
