Miso udon noodle soup

Quick and delicious soup, perfect for a speedy dinner for two.
Ingredients:
  • 95g udon noodles
  • 1/2 baby pak choy, trimmed, shredded
  • 1/4 small carrot, peeled, cut into matchsticks
  • 50g enoki mushrooms, ends trimmed
  • 1/2 shallot, trimmed, thinly sliced
  • 18.00 gm miso paste
Instructions:
  • In a heatproof bowl, combine noodles, pak choy, carrot, mushrooms, and shallot. Pour boiling water over them and let sit for 1-2 minutes until vegetables soften. Drain and refresh under cold running water.
  • In a serving bowl, combine miso paste and 330ml (1 1/3 cups) boiling water. Whisk with a fork until miso paste dissolves. Add the noodle mixture and let sit for 3-4 minutes until heated through.
