Try this irresistible miso salmon for a quick, healthy 20-minute weeknight dinner!
Ingredients:
  • 24.00 gm miso paste
  • 4 x 120g Deli Fresh Salmon Skin-On
  • 180g ramen noodles
  • 150g snow peas, thinly sliced lengthways
  • 1 carrot, peeled, cut into long matchsticks
  • 1 bunch radish, thinly sliced
  • 62.50 ml coriander leaves
  • 1 tsp sesame oil
Instructions:
  • Preheat a greased barbecue grill or chargrill to medium-high. Mix miso paste and half the honey in a bowl. Season with pepper and coat salmon with the mixture.
  • Grill salmon for 2-3 minutes on each side until desired doneness. Place on a plate and cover with foil. Let it rest for 5 minutes before serving.
  • Boil the noodles in a saucepan for 3 minutes until tender. Add snow peas and cook for an additional 30 seconds until bright green and tender crisp. Quickly cool the noodles and snow peas in cold water, then drain and transfer to a large bowl.
  • Combine carrot, radish, and coriander with the noodles. Whisk soy sauce, vinegar, sesame oil, and remaining honey in a bowl. Pour over the noodles and toss to mix. Serve with salmon.
