Japanese-inspired marinade elevates grilled chicken thighs with unique sweet and salty flavors.
Ingredients:
  • 3 tablespoons miso paste
  • 3 tablespoons mirin (Japanese sweet wine)
  • 3 tablespoons rice wine
  • 3 tablespoons soy sauce
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 2 teaspoons minced fresh ginger
  • 1 pound boneless, skinless chicken thighs
  • 1 teaspoon sesame seeds
Instructions:
  • Combine miso, mirin, rice wine, soy sauce, and honey in a bowl, ensuring the miso is fully dissolved. Add garlic and ginger, and mix well.
  • Transfer the marinade to a resealable plastic bag. Add the chicken, press out any excess air, and seal the bag securely. Massage the chicken to evenly coat it with the marinade. Refrigerate for 8 hours or overnight, giving the bag a gentle shake or turn every so often.
  • Preheat your outdoor grill to medium-high heat, then lightly oil the grate.
  • Remove the chicken from the flavorsome marinade and gently shake off the extra. Dispose of the leftover marinade.
  • Grill chicken until cooked through, about 4 minutes per side. Check with an instant-read thermometer to ensure it reaches at least 165 degrees F (74 degrees C).
  • Chop the grilled pieces into wide strips, about 4 to 5 slices per piece, then sprinkle with sesame seeds before serving.
