Sesame tuna, avocado & cucumber onigiri

Try these delicious Sesame Tuna Onigiri with avocado and cucumber for a Japanese-inspired meal, made with SunRice.
Ingredients:
  • 400g rice
  • 85.80 gm sushi seasoning (obento)
  • 125g (or 95g) can tuna in springwater, drained well
  • 1/3 small avocado, finely chopped
  • 50g finely chopped cucumber
  • 19.80 gm Japanese mayonnaise (Kewpie)
  • 1/2 tsp sesame oil
  • 3 nori sheets
  • 75.00 gm sesame seeds, toasted
  • Soy sauce, to serve
  • Pickled ginger, to serve
  • Wasabi, to serve
Instructions:
  • Prepare the SunRice sushi rice as directed on the packet. Transfer to a large ceramic dish and gently break up any lumps with a spatula. Slowly pour in ½ cup (125ml) sushi seasoning while lifting and turning the rice until it cools.
  • In a medium bowl, mix together the tuna, avocado, cucumber, mayonnaise, and oil. Season with pepper. Cut the nori sheets into small strips to wrap around the onigiri.
  • Lay plastic wrap on a clean surface. Combine remaining sushi seasoning in a bowl. Put 2 level tablespoons of rice in the middle and shape into an 8cm triangle using seasoned fingers. Add a heaped teaspoon of tuna in the middle, cover with 2 tablespoons of rice. Shape into a triangle using plastic wrap to avoid sticking. Remove wrap and wrap in nori. Repeat for 12 onigiri. Sprinkle with sesame seeds.
  • Accompany the onigiri with soy sauce and pickled ginger.
