Ingredients:
  • 2 avocados
  • 2 Lebanese cucumbers
  • 35g (1/4 cup) roasted peanuts, roughly chopped
  • 40.00 ml chopped chives
  • 2.00 lime, juiced
  • 50g (1/3 cup) sesame seeds
  • 1 tsp fennel seeds
  • 2 x 250g pieces yellowfin tuna, cut in half
  • 18.20 gm peanut oil
  • 45.50 gm peanut oil
  • 4cm piece ginger, finely grated
  • 3 eschalots, finely chopped
  • 1/2 bird’s-eye chilli, seeded, finely chopped
  • 75g (1/3 cup) caster sugar
  • 125ml (1/2 cup) rice vinegar
  • 21.00 gm soy sauce
  • 24.40 gm fish sauce
Instructions:
  • For the chili and ginger dressing, start by warming up oil in a saucepan over low heat. Stir in ginger, eschalots, and chili, cooking until soft for about 3 minutes. Mix in sugar and vinegar until the sugar dissolves. Let it simmer for 5 minutes to balance the vinegar flavor. Add 2 tablespoons of water and bring it to a boil. Take it off the heat and incorporate soy sauce, fish sauce, and lime juice. Stir well and allow it to cool down before using.
  • Cut the avocados into thin wedges. Slice the cucumbers in half lengthwise, remove the seeds, and thinly slice on the diagonal. Combine the avocados, cucumbers, nuts, chives, and lime juice in a large bowl and toss together.
  • Spread sesame and fennel seeds on a plate, season generously with freshly ground black pepper, press a piece of tuna into the seed mixture to coat both sides. Repeat with remaining tuna.
  • In a large frying pan over medium-high heat, sear tuna for 1 1/2 minutes on each side for your preferred doneness.
  • Plate the salad, then generously drizzle it with the dressing. Slice the tuna and arrange it next to the salad. Finish off with a final drizzle of dressing before serving.
