Ingredients:
  • 120g snow peas, cut into thin matchsticks
  • 40g sesame seeds
  • 500g thick tuna steaks, cut into 3cm pieces
  • 18.20 gm olive oil
  • 1/4 small Chinese cabbage, hard core removed, finely shredded
  • 1 carrot, peeled, coarsely grated
  • 120g bean shoots
  • 3 shallots, cut into thin matchsticks
  • 125g mayonnaise
  • Salt & freshly ground pepper
  • Coriander leaves, to serve
Instructions:
  • Blanch the snow peas in boiling water for 2-3 minutes until crisp-tender, then shock in cold water to stop the cooking process.
  • Spread the sesame seeds on a plate and delicately cover the tuna with them.
  • Sear the tuna in hot oil in batches for 1 minute per side, or until medium rare and golden. Pat dry on paper towel.
  • Mix together the cabbage, carrot, bean shoots, shallots, snow peas, and mayonnaise in a generous bowl. Don't forget to season it all with a sprinkle of salt and pepper.
  • Serve the coleslaw on individual plates, then generously top with tuna and fresh coriander before indulging in this flavorful dish.
