Seared sesame-crusted ahi tuna: crispy edges, rare center, restaurant-quality.
Ingredients:
  • 4 (6 ounce) sushi-grade ahi tuna steaks
  • 1.5 teaspoons blackened seasoning
  • 2 tablespoons teriyaki sauce
  • 1 tablespoon white sesame seeds
  • 1 tablespoon black sesame seeds
  • 2 tablespoons grapeseed oil
Instructions:
  • After rinsing the tuna and patting it dry, transfer it to a dish. Season both sides with blackened seasoning, then generously brush teriyaki sauce over the entire surface of the tuna to create a flavorful glaze.
  • Combine white and black sesame seeds in a shallow dish and coat the tuna on all sides with the mixture.
  • Preheat cast iron skillet with a dash of oil over high heat until smoking. Sear tuna for 30 to 45 seconds on each side, making sure not to overcook.
  • Transfer the fresh tuna to a cutting board and slice it into 1/4-inch thick pieces. Artfully arrange the tuna slices on individual plates, slightly overlapping them. Serve right away to enjoy at its best.
