Seared sesame tuna

Ingredients:
  • 1 heaped tablespoon miso paste
  • 2 x 150 g tuna steaks (ideally 2cm thick), from sustainable sources
  • 4 tablespoons sesame seeds
  • 8 spring onions
  • 150 g sugar snap peas
Instructions:
  • Heat a large non-stick frying pan over medium-high heat. Coat the tuna with miso, press sesame seeds onto it, then sear in the hot pan with 1 tablespoon of olive oil for 1½ minutes on each side until golden outside and pink inside. Rest the tuna on a board. Wipe the pan clean, return to heat, and quickly cook trimmed spring onions and sugar snaps with red wine vinegar and sea salt for 2 minutes until lightly charred. Slice the tuna and serve over the vegetables, drizzled with 1 teaspoon of extra virgin olive oil.
