Revamp school lunches with this easy and nutritious recipe for the new year.
Ingredients:
  • 2 wholemeal or multigrain wraps
  • 1 small avocado, mashed
  • 1 small carrot, grated
  • 1 small cucumber, cut into thin ribbons
  • 180g can tuna in springwater, drained, flaked
  • 19.80 gm whole-egg mayonnaise
  • 2 iceberg lettuce leaves, shredded
Instructions:
  • Lay 1 wrap on a board. Evenly spread half of the creamy avocado, making sure to leave a 1cm border. Layer with half of the crunchy carrot, refreshing cucumber, and flavorful tuna.
  • Spread a generous layer of mayonnaise and layer a generous amount of lettuce. Roll the wrap tightly to seal in the delicious filling and trim the ends if using circular wraps.
  • Slice the ingredients into 6 pieces each, then continue with the rest of the wrap, avocado, carrot, cucumber, tuna, mayonnaise, and lettuce.
