Japanese-inspired stir-fry elevates the week's end with a flavorful twist.
Ingredients:
  • 4 (about 180g each) beef scotch fillet steaks
  • 60ml (1/4 cup) teriyaki marinade
  • 36.40 gm light olive oil
  • 2 x 200g pkts udon noodles
  • 1 x 400g pkt Asian Stir-fry Vegetables
  • 60ml (1/4 cup) Chilli Soy Noodle Sauce
  • 3 shallots, ends trimmed, thinly sliced diagonally
Instructions:
  • In a large glass or ceramic dish, marinate the beef by pouring over the marinade and turning to coat. Refrigerate for 5 minutes. Heat oil in a large non-stick frying pan over medium-high heat. Cook the beef for 3 minutes on each side for medium doneness. Transfer to a plate and cover with foil to keep warm.
  • Place the noodles in a colander and rinse under cold running water, then separate and drain them.
  • In the same pan, heat the remaining oil and sauté the onion until softened. Stir in the rest of the vegetables and cook until tender crisp. Add noodles and sauce, stir-frying until heated through. Slice the beef thinly across the grain. Divide the stir-fry into serving bowls, topping with beef and shallots before serving.
