Rum-infused cake for a delicious twist.
Ingredients:
  • 1.75 cups strong brewed coffee
  • 0.25 cup dark rum
  • 5 (1 ounce) squares unsweetened chocolate
  • 1 cup butter
  • 2 cups white sugar
  • 2 cups all-purpose flour
  • 0.125 teaspoon salt
Instructions:
  • In a saucepan, combine coffee and rum and simmer. Then add chocolate and butter or margarine. Stir occasionally until melted. Remove from heat.
  • In a large bowl, whisk eggs until fluffy. Slowly incorporate sugar until the mixture thickens. Stir in vanilla and melted chocolate. In a separate bowl, combine flour, baking soda, and salt, then fold into the chocolate mixture.
  • Pour the batter into a greased and floured tube pan. Bake in a preheated 275°F (135°C) oven for 1 1/2 hours or until a toothpick comes out clean. Let it cool on a rack. Yields 16 servings.
