Decadent Mississippi mud cake with a surprise layer of marshmallow cream. Irresistibly delicious!
Ingredients:
  • 1.25 cups butter, softened
  • 0.5 cup unsweetened cocoa powder
  • 4 eggs
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1.5 cups chopped walnuts
  • 2 teaspoons vanilla extract
  • 0.5 cup milk
  • 3 cups confectioners' sugar
  • 0.33333334326744 cup unsweetened cocoa powder
  • 1 (7 ounce) jar marshmallow creme
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 9x13-inch cake pan.
  • In a large saucepan over gentle heat, melt 1 cup of butter along with cocoa, stirring frequently. Take the pan off the heat and mix in white sugar. Beat until thoroughly combined, then add eggs one by one, while continuing to beat.
  • Combine flour, baking powder, and salt, then mix in walnuts and vanilla. Transfer batter to the pan and bake in the preheated oven for 35 to 45 minutes.
  • Prepare the icing while the cake is baking: Cream together 1/4 cup of butter, 1 teaspoon of vanilla, cocoa, milk, and confectioner's sugar until smooth.
  • Take the cake out of the oven, then cover the top with marshmallow cream. Drizzle icing over the marshmallow cream while the cake is still warm, and use a spatula to create a rustic, swirled effect.
