Mixed Asian greens with miso mushrooms recipe

Sake-glazed mushrooms add a sweet touch to this mixed side dish.
Ingredients:
  • 60.00 gm red miso paste
  • 40.00 ml mirin
  • 40.00 ml sake (see notes)
  • 30.00 gm caster sugar
  • 1/2 bunch gai lan, trimmed, stems and leaves separated (see notes)
  • 1 bunch baby buk choy, trimmed, halved lengthways
  • 150g snow peas, trimmed
  • 18.40 gm vegetable oil
  • 125g shiitake mushrooms, thickly sliced
  • 9.00 gm sesame seeds, toasted
  • 1 green onion, finely shredded
Instructions:
  • Combine miso, mirin, sake, and sugar in a bowl, stirring until the sugar is fully dissolved.
  • Place the gai lan stems in a large steamer over a pot of boiling water and cover. Steam for 2 minutes until bright green. Then, add the gai lan leaves, bok choy, and snow peas. Cover and steam for an additional 3 minutes until bright green and tender.
  • Heat a wok over high heat and add oil, swirling to coat. Stir-fry mushrooms for 2 minutes until golden. Add sauce mixture and cook for 30 seconds until sauce thickens and mushrooms are glossy, tossing continuously.
  • Arrange steamed greens elegantly on a large serving plate. Top with flavorful shiitake mixture. Garnish with sesame seeds and onion. Serve and enjoy.
