Ginger chilli fish with herbed rice and Asian greens

Elevate white fish with zesty Asian flair.
Ingredients:
  • 250g (1 1/4 cups) white long-grain rice
  • Canola oil spray
  • 4 (about 150g each) white fish fillets
  • 20.00 gm sushi seasoning
  • 42.00 gm salt-reduced soy sauce
  • 5cm-piece fresh ginger, peeled, cut into matchsticks
  • 1 long red chilli, seeded, thinly sliced
  • 200g snow peas, halved diagonally lengthways
  • 1 bunch choy sum, trimmed, leaves separated
  • 40.00 ml chopped fresh coriander
  • 40.00 ml chopped fresh mint
  • Fresh mint leaves, to serve
Instructions:
  • Prepare rice according to package instructions. In a large non-stick frying pan over medium-high heat, lightly spray with oil. Cook fish for 2-3 minutes on each side until fully cooked. Transfer fish to a plate. In the same pan, add sushi seasoning, soy sauce, ginger, and chili. Cook for 1 minute until the mixture is warm and slightly thickened.
  • Cook the snow peas and choy sum in boiling water until vibrant green and crisp-tender. Drain them and mix coriander and chopped mint into the rice, then gently combine. Garnish with fresh mint leaves.
  • Arrange snow peas, choy sum, and fish on individual plates. Drizzle with flavorful ginger mixture and serve with rice.
