Make a quick and tasty steamed fish with ginger and soy sauce in 25 minutes.
Ingredients:
  • 4 x 200g ling fish fillets
  • 1 bunch coriander, leaves picked
  • 4 spring onions, sliced
  • 1 long red chilli, thinly sliced
  • Steamed rice, to serve
  • 131.25 gm light soy sauce
  • 2 cloves garlic, shredded
  • 40.00 ml ginger, shredded
  • 1 stick lemongrass, white part thinly sliced
  • 62.50 ml kecap manis
  • 62.50 ml brown rice vinegar
  • 1/2 tsp sesame oil
Instructions:
  • Ensure the fish is dry by patting it with paper towels. Place baking paper in a large steamer basket and arrange the fish on top. Steam with the wok covered over simmering water for 4-5 minutes, or until the flesh turns white.
  • Heat the ginger sauce ingredients in a small saucepan with 1/2 cup of water until fragrant and slightly reduced, simmering on low heat for about 5 minutes.
  • Place the cooked fish on a beautiful serving platter and generously drizzle half of the hot sauce over it. Mix together the coriander, spring onions, and chili, then sprinkle this flavorful mixture over the fish. Serve the dish with steamed rice and the rest of the sauce on the side.
