Whip up a quick and healthy steamed fish dinner in just 15 minutes using a wok and steamer.
Ingredients:
  • 20.00 ml dry sherry
  • 5.00 gm caster sugar
  • 1 tsp sesame oil
  • 21.00 gm light soy sauce
  • 2 (about 150g each) firm white fish fillets
  • 2cm-piece fresh ginger, peeled, cut into matchsticks
  • Steamed Asian greens, to serve
  • 1 shallot, trimmed, thinly sliced diagonally
  • 1 long fresh red chilli (optional), halved, deseeded, thinly sliced
Instructions:
  • In a small jug, mix together the sherry, sugar, oil, and half of the soy sauce.
  • Place the fish in a shallow heatproof bowl that fits inside your steamer. Sprinkle with ginger and pour the sherry mixture over the top.
  • Place the bowl in a steamer over a wok with simmering water, ensuring the steamer doesn't touch the water. Steam for 5 minutes or until the fish flakes easily with a fork test.
  • Plate the Asian greens and fish, then generously drizzle with the remaining soy sauce and bowl juices. Finish by sprinkling shallots and chili on top, if preferred.
