Ingredients:
  • 3 shallots
  • 31.50 gm lime juice
  • 24.40 gm fish sauce
  • 24.40 gm oyster sauce
  • 1 tsp sesame oil
  • 20.00 ml grated ginger
  • 800g chicken breast
  • 12.00 gm toasted sesame seeds
  • Steamed white rice, to serve
Instructions:
  • Start by finely chopping 1 shallot, then thinly slice the remaining shallots on the diagonal. Next, bring a large wok or saucepan of water to a boil. In a small bowl, mix lime juice, fish sauce, oyster sauce, sesame oil, grated ginger, and the chopped shallot.
  • Marinate the chicken for 30 minutes, then transfer it along with the marinade to a lined bamboo steamer. Steam over boiling water with the lid on for 8-10 minutes until just cooked through.
  • Diagonally slice the chicken and drizzle with the flavorful cooking juices. Sprinkle with shallots and toasted sesame seeds. Pair with steamed rice presented on a banana leaf for an elegant touch.
