Succulent halibut infused with zesty ginger and soy sauce, topped with crispy, flavor-packed hot oil.
Ingredients:
  • 1 pound halibut fillet
  • 1 teaspoon coarse sea salt or kosher salt
  • 1 tablespoon minced fresh ginger
  • 3 tablespoons thinly sliced green onion
  • 1 tablespoon dark soy sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon peanut oil
  • 2 teaspoons toasted sesame oil
  • 0.25 cup lightly packed fresh cilantro sprigs
Instructions:
  • Dry the halibut with paper towels, then season both sides with salt. Sprinkle the ginger over the fish and transfer it to a heatproof ceramic dish.
  • Steam the ingredients in a bamboo steamer over gently boiling water, covered, for 10 to 12 minutes.
  • Discard any excess water from the dish, then generously sprinkle the fillet with fresh green onions. Finish by drizzling a blend of both soy sauces over the fish.
  • In a small skillet over medium-high heat, heat peanut and sesame oils until smoking. Carefully pour the hot oil over the halibut fillet. Be cautious as the hot oil will cause the green onions and water to spatter. Garnish with cilantro sprigs and serve promptly.
