Elevate your meal with a zesty steamed fish creation.
Ingredients:
  • 4 (200g each) firm white fish fillets
  • 62.50 ml fresh coriander leaves
  • 2 green onions, thinly sliced
  • 1 long red chilli, deseeded, thinly sliced
  • 3cm piece fresh ginger, peeled, cut into thin matchsticks
  • 1 garlic clove, thinly sliced
  • 5.00 gm caster sugar
  • 21.00 gm soy sauce
  • 27.30 gm peanut oil
  • 1 tsp sesame oil
  • Steamed jasmine rice, to serve
  • Steamed Asian greens, to serve
Instructions:
  • In a large wok over medium heat, gently simmer 2 cups of cold water. Line a 30cm bamboo steamer with baking paper, then place it over the water. Add the fish to the steamer, cover, and steam for 5 to 10 minutes until cooked through. Transfer the fish to a plate, cover to keep warm, and serve.
  • In a bowl, mix together coriander, onion, and chili. In a heatproof bowl, combine ginger, garlic, sugar, and soy sauce. Heat peanut oil and sesame oil in a saucepan over high heat until smoking. Carefully pour the hot oils over the ginger mixture (be cautious, it may splatter).
  • Drizzle the flavorful ginger mixture over the fresh fish, then generously sprinkle the fragrant coriander mixture on top. Serve the delicious dish with a side of fluffy rice and vibrant greens.
