Mixed fajita platter

"Ultimate Mexican fajita platter with juicy chicken, pork, and beef - perfect for sharing and savoring together!"
Ingredients:
  • 5.00 gm ground cumin
  • 2.50 gm smoked paprika
  • 2.40 gm garlic salt
  • 1/2 tsp Mexican chilli powder
  • 400g beef rump steak
  • 400g chicken tenderloins
  • 400g pork leg steaks
  • 1 large red onion, cut into thin wedges
  • 3 capsicums, thinly sliced (see notes)
  • Olive oil cooking spray
  • 12 flour tortillas
  • Sour cream, to serve
  • Lime wedges, to serve
  • 400g can kidney beans, drained, rinsed
  • 2 medium tomatoes, seeded, finely chopped
  • 1 long red chilli, finely chopped
  • 62.50 ml roughly chopped fresh coriander leaves
  • 42.00 gm lime juice
  • 18.20 gm extra virgin olive oil
  • 1 large avocado, roughly mashed
  • 40.00 ml finely chopped fresh coriander leaves
  • 1/2 red onion, finely chopped
Instructions:
  • Mix spices and oil in a bowl as per notes. Put beef, chicken, and pork in separate glass or ceramic bowls. Sprinkle spice mixture over each meat evenly and rub to coat. Chill in the refrigerator for 30 minutes.
  • Prepare the bean salsa by mixing all ingredients in a bowl, then season with salt and pepper to taste.
  • Make delicious guacamole by combining all the ingredients in a bowl and seasoning with salt and pepper to taste.
  • Heat up a well-greased barbecue hotplate on medium-high. Grill the beef, chicken, and pork for 3 to 4 minutes on each side until the chicken and pork are fully cooked and the beef reaches your preferred doneness. Place the cooked meat on a plate, cover loosely with foil, and let it rest for 5 minutes before thinly slicing.
  • Drizzle oil over onion and capsicum. Grill them on a hot barbecue for 5 minutes, turning occasionally, until tender and slightly charred. Grill tortillas for 30 seconds on each side until they start to char.
  • Assemble meat, onion, and capsicum on a large platter. Accompany with salsa, guacamole, tortillas, sour cream, and lime wedges.
