Mixed green salad with mustard dressing

Elevate your greens with homemade mustard dressing.
Ingredients:
  • 100g snow peas, trimmed, halved
  • 150g sugar snap peas, trimmed
  • 150g green beans, trimmed
  • 82.50 ml fresh mint leaves
  • 50g baby spinach
  • 50g baby rocket
  • 82.50 ml pepitas, toasted
  • 20.00 ml red wine vinegar
  • 35.10 gm American mustard
Instructions:
  • Prepare the dressing by combining oil, vinegar, and mustard in a screwtop jar. Season with salt and pepper, then seal the lid tightly and refrigerate.
  • Blanch peas and beans in boiling water for 1 to 2 minutes until tender, then quickly cool in cold water. Combine with mint, spinach, rocket, and pepitas in a bowl or container. Mix well, then refrigerate covered.
