Cheese stick salad with fresh greens ready in just 15 minutes.
Ingredients:
  • 5 1/2-ounce block Colby-Monterey Jack cheese (from 8-ounce block)
  • 2 tablespoons Italian dressing
  • 1/4 cup Italian-style dry bread crumbs
  • 6 cups bite-size pieces mixed salad greens
  • 1/4 cup Italian dressing
Instructions:
  • Slice the cheese block into twelve 1/4-inch-thick slices that are 2 1/2x1 inch in size. Prepare two small shallow bowls with 2 tablespoons of dressing in one and bread crumbs in the other. Dip each cheese slice into the dressing, then coat thoroughly with bread crumbs.
  • Heat a 10-inch nonstick skillet sprayed with cooking spray over medium heat. Cook cheese slices in the skillet for 1 to 2 minutes, gently turning once, until they turn light golden brown and the cheese is warm. Be careful not to overcook to prevent the cheese from melting too much.
  • Mix salad greens with 1/4 cup of dressing, then distribute onto 4 plates. Garnish each salad with 3 pieces of cheese. Serve promptly.
