Enhance the flavor of your herb pilaf with an abundance of mushrooms.
Ingredients:
  • 86.63 gm reduced-salt soy sauce
  • 57.20 gm honey
  • 500g mixed mushrooms, sliced
  • 18.20 gm olive oil
  • 40g butter
  • 1 brown onion, finely chopped
  • 400.00 gm long-grain brown rice
  • 765.00 gm vegetable liquid stock
  • 125.00 ml fresh mixed herbs (such as parsley and chives), roughly chopped
Instructions:
  • Mix together the soy sauce and honey in a large ceramic dish. Add the mushrooms and toss until they are thoroughly coated. Cover and refrigerate for 1 hour.
  • 1. Preheat the oven to 180C. 2. Heat oil and butter in a saucepan over medium heat, then add the onion and cook for 3 minutes until tender. 3. Add the rice and stir until coated in the butter mixture. 4. Mix in the mushrooms, marinade, and stock, then bring the mixture to a boil.
  • Transfer the mixture into an 8-cup ovenproof dish and cover with a snug lid. Bake for 1 hour 15 minutes or until the rice is tender and the liquid is absorbed. Add in the herbs, season with salt and pepper, then serve.
