Vegan-friendly stuffing with flavorful mushrooms, perfect for any dish.
Ingredients:
  • 2 shallots
  • 4 cloves of garlic
  • 350 g mixed wild mushrooms
  • 400 g closed cup or chestnut mushrooms
  • ½ a bunch of fresh thyme
  • 350 g stale bread
  • 100 g pecans or hazelnuts
  • 1 bunch of fresh flat-leaf parsley
  • 25 g dried porcini
  • 80 ml olive oil
  • 2 fresh bay leaves
Instructions:
  • Peel and finely chop the shallots and garlic, and roughly chop the fresh mushrooms, thyme leaves, and stale bread into small chunks. Lightly toast and roughly chop the nuts. Roughly chop the parsley. Rehydrate the porcini with boiling water. Heat oil in a pan, cook shallot and garlic until softened. Drain porcini, reserve liquid. Add porcini, mushrooms, bay leaves, and thyme to the pan. Cook until mushrooms are soft. If they release liquid, pour onto diced bread and continue cooking. Transfer mixture to a bowl and let cool. Preheat oven to 190ºC/375ºF/gas 5. Once cooled, add bread, salt, pepper, nuts, and half of porcini liquid. Combine well. For moisture, add more porcini liquid. Add parsley, place in baking dish, cover with foil, bake for 35 minutes, then uncover and bake for 10 minutes. Garnish with parsley before serving.
