Mixed olive and thyme baked ricotta

Ingredients:
  • 400g fresh ricotta cheese (see note)
  • 1 tsp chopped fresh thyme leaves
  • 125.00 ml chopped pitted mixed olives
  • 4.60 gm olive oil
  • Fresh thyme sprigs, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Lightly grease a 6.5cm-deep, 5.5cm x 16cm tin or ceramic loaf pan, and line a baking tray with baking paper.
  • In a bowl, mix together ricotta, egg, and chopped thyme. Season with pepper, then stir in olives. Transfer the mixture into a prepared pan and smooth the top.
  • Bake until ricotta is just set, about 20-25 minutes. Transfer to prepared tray, drizzle with oil, and bake until golden, 10-15 minutes. Let sit for 5 minutes, then garnish with thyme sprigs before serving.
