Sheet Pan Gnocchi With Mushrooms, Sausage, and Kale

Satisfying sheet pan dinner: Gnocchi, mushrooms, sausage, and kale, roasted to perfection for a flavorful meal.
Ingredients:
  • 8 ounces mixed mushrooms
  • 1 teaspoon dried thyme
  • 3/4 teaspoon kosher salt
  • 3 tablespoons extra-virgin olive oil, divided, plus extra to drizzle
  • 16 ounces frozen gnocchi (not defrosted; or shelf-stable gnocchi)
  • 3 large cloves garlic, unpeeled
  • 8 ounces spicy Italian sausage
  • 2 tablespoons water
  • 3 packed cups roughly chopped kale (about 1 bunch1 bunch should suffice)
  • Freshly grated Parmesan cheese, to pass at the table
Instructions:
  • Preheat the oven to 425°F and line a large sheet pan (about 17 x 12 or 18 x 13-inch) with parchment paper.
  • Clean and cut the mushrooms: Rinse the mushrooms in a colander, gently rubbing off any dirt under running water. Shake off excess water. Quarter cremini and button mushrooms, halve shitakes, and tear oyster and maitake mushrooms into large pieces. Place all mushrooms on a sheet pan, sprinkle with thyme and salt. Drizzle with 2 tablespoons of olive oil and toss to coat evenly.
  • - Combine gnocchi and garlic with mushrooms, then spread in the pan. - Remove sausage casings, tear into pieces, and scatter evenly over the mixture. - Bake for 20 minutes, stir ingredients, then bake until gnocchi is golden and cooked, about 10 minutes more. - Take the pan out of the oven.
  • Prepare the kale by squeezing the roasted garlic cloves into a large bowl, along with lemon juice, water, and the remaining tablespoon of olive oil. Mix well. Add the kale to the bowl and coat it evenly in the dressing. Transfer everything onto the sheet pan and gently mix it with the gnocchi and mushrooms using your hands or a spoon.
  • Complete cooking and present: Place the pan back in the oven and bake until the kale is tender, approximately 10 minutes. Gently transfer the gnocchi into 4 shallow bowls, drizzle each with a touch of olive oil, and garnish with Parmesan cheese. Any remaining gnocchi can be stored in a sealed container in the refrigerator. When ready to enjoy again, simply add a splash of water and olive oil, warm in the microwave or in a skillet over medium heat. Adjust the flavor with lemon and Parmesan to your liking.
