Mixed roasted pumpkin

Elevate fall with a tasty pumpkin side dish.
Ingredients:
  • 500g golden nugget pumpkin, halved, deseeded, cut into 3cm wedges
  • 500g Kent pumpkin, halved, deseeded, cut into 3cm wedges
  • 500g butternut pumpkin, halved, deseeded, cut into 2cm slices
  • 36.40 gm olive oil
  • 50g salted pistachio, shelled, coarsely chopped
  • 2 green shallots, ends trimmed, thinly sliced
  • 40.00 ml finely shredded fresh mint
Instructions:
  • Preheat the oven to 200C. Spread the pumpkin in a roasting pan, drizzle with oil, and season with salt and pepper. Roast for 1 hour and 15 minutes or until tender.
  • In a bowl, mix pistachios, green shallots, and mint. Sprinkle over the pumpkin and toss together. Serve and enjoy!
