Decadent Mocha Cream Cheese Brownies with a rich espresso kick and creamy cheese swirl.
Ingredients:
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup Original Bisquick™ mix
  • 1/3 cup unsweetened baking cocoa
  • 2 tablespoons instant espresso powder
  • 3/4 cup semisweet chocolate chips
  • 4 oz cream cheese (half of 8-oz package), softened
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup sugar
  • 1 egg
  • 1/4 cup Original Bisquick™ mix
  • 1 tablespoon brewed espresso coffee or very strong coffee, room temperature
Instructions:
  • Preheat oven to 350°F and prepare an 8-inch square pan by spraying it with cooking spray or lining it with parchment paper.
  • Combine butter and sugar in a large bowl. Mix in eggs and vanilla until combined. Add Bisquick mix, cocoa, and espresso powder; stir until just combined. Gently fold in chocolate chips. Enjoy!
  • In a medium bowl, combine cream cheese, 2 tablespoons butter, and 1/4 cup sugar. Beat with an electric mixer on medium speed until smooth and creamy for about 3 minutes. Mix in the egg until combined. Gradually add 1/4 cup Bisquick mix in two additions, alternating with brewed espresso.
  • Layer half of the brownie batter in the pan, spoon dollops of filling over it, then top with the remaining brownie batter by dollops.
  • Create a marbled design by running a knife through the batter and filling in a zig-zag motion across the pan, then turn the pan and repeat for a visually appealing finish.
  • Bake until the tops of the brownies start to turn golden and a toothpick inserted into the center comes out with moist crumbs, about 25 to 35 minutes.
