Espresso Cheesecake Bars

Delicious layered bar with creamy cream cheese filling on a mocha cookie crust.
Ingredients:
  • 1 1/2 cups chocolate cookie crumbs
  • 1 teaspoon instant espresso coffee powder
  • 1/4 cup butter, melted
  • 1 (8-oz.) pkg. cream cheese, softened
  • 1/2 teaspoon vanilla
  • 1 egg
Instructions:
  • Preheat your oven to 350°F. Mix cookie crumbs, 1/2 teaspoon of espresso coffee powder, and melted butter in a medium bowl until combined. Set aside 1/4 cup of the mixture for topping. Press the remaining mixture into the bottom of an ungreased 8-inch square pan.
  • In a medium bowl, mix cream cheese until smooth and creamy. Add sugar, 1/2 teaspoon espresso coffee powder, vanilla, and egg, and blend well. Pour mixture over crust and sprinkle with reserved crumb mixture.
  • Bake at 350°F until the center is set (15-20 minutes). Cool for 30 minutes until completely cooled. Refrigerate for 3-4 hours until firm. Cut into bars with a hot, wet knife and store in the refrigerator.
