Decadent tiramisu cheesecake with ladyfinger crust, creamy espresso filling, and chocolate finish.
Ingredients:
  • 1 (12 ounce) package ladyfingers
  • 0.25 cup unsalted butter, melted
  • 2 tablespoons coffee-flavored liqueur
  • 3 (8 ounce) packages cream cheese, softened
  • 1 (8 ounce) container mascarpone cheese, softened
  • 1 cup white sugar
  • 0.25 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon heavy cream, or more as needed
  • 0.25 ounce semisweet chocolate
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and place a pan of water on the lowest rack.
  • Create the crust by crushing ladyfingers into fine crumbs. Combine the crumbs in a bowl with melted butter and coffee-flavored liqueur, stirring until well mixed. Press the mixture into the bottom of a 9-inch springform pan.
  • Prepare the filling by blending cream cheese, mascarpone cheese, and sugar in a large bowl using an electric mixer until ultra-smooth, for 2 to 3 minutes. Scrape the sides of the bowl and incorporate coffee-flavored liqueur. Gently mix in flour and eggs on low speed until just combined. If the batter is too thick, incorporate heavy cream. Pour the filling over the crust.
  • Bake in the center of the oven until perfectly set, around 40-45 minutes.
  • Allow the cheesecake to cool on the center rack of the turned-off oven for 20 minutes.
  • After baking, allow to cool completely on a wire rack for around 30 minutes.
  • Chill in the refrigerator for a minimum of 3 hours, or ideally overnight.
  • Sprinkle freshly grated semisweet chocolate on top just before serving.
