Impressive Thanksgiving dessert: pumpkin pie meets tiramisu for a decadent dessert bar.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Oatmeal Cookie Mix
  • 1/2 cup butter or margarine, softened
  • 8 oz mascarpone cheese
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup sugar
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1/2 cup canned pumpkin (not pumpkin pie mix)
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 cup melted semisweet chocolate chips
  • 2 tablespoons cognac
  • 1 tablespoon instant espresso powder
  • 1/3 cup heavy whipping cream
  • 2/3 cup semisweet chocolate chips
  • Whipped cream, if desired
Instructions:
  • Preheat the oven to 350°F. Grease a 13x9-inch pan with cooking spray and line it with foil. In a medium bowl, combine the cookie mix and butter, using a pastry blender or fork until the mixture is crumbly. Press the mixture into the bottom of the pan and bake for 8 to 10 minutes, or until set.
  • In a large bowl, use an electric mixer to beat mascarpone, cream cheese, sugar, flour, and egg until smooth. Transfer 3/4 cup of the mixture to a small bowl and set aside. Stir pumpkin and pumpkin pie spice into the remaining mixture in the large bowl. Mix melted chocolate, cognac, and espresso powder into the reserved 3/4 cup of cheesecake mixture.
  • Spread the pumpkin cheesecake mixture over the crust. Dollop the chocolate cheesecake mixture on top of the pumpkin layer, then use a knife to create a beautiful swirling pattern.
  • Bake for 30 to 35 minutes until edges are firm but the center is slightly jiggly. Allow to cool for 30 minutes.
  • Place the heavy whipping cream in a microwavable bowl and microwave for 1 to 1 ½ minutes until hot. Stir in 2/3 cup chocolate chips until smooth, then spread the mixture on top of the cheesecake.
  • Chill for approximately 4 hours until fully cooled. Slice into bars and garnish each with a dollop of whipped cream just before serving.
