Indulgent pumpkin tiramisu: creamy layers of mascarpone and ladyfingers soaked in coffee and rum.
Ingredients:
  • 2 cups heavy cream, divided
  • 1 (8 ounce) container mascarpone cheese
  • 1 cup unsweetened pumpkin puree
  • 0.5 cup Sugar In The Raw®
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons Sugar In The Raw®, divided
  • 0.75 cup brewed coffee
  • 3 tablespoons dark rum
  • 2 (3.5 ounce) packages ladyfingers
  • 2 ounces shaved white chocolate
Instructions:
  • Whip together 1 1/2 cups cream, mascarpone, pumpkin puree, 1/2 cup sugar, and pumpkin spice in a large bowl or stand mixer until stiff peaks form.
  • Whip 1/2 cup of heavy cream with 1 tablespoon of sugar in a medium bowl until it forms stiff peaks.
  • Combine coffee, rum, and the remaining 1 tablespoon sugar in a small bowl, stirring until well mixed.
  • Prepare 6 cups or ramekins that are about 4 inches wide. Soak ladyfingers in coffee mixture and arrange a single layer in the cups or ramekins. Trim ladyfingers as needed to fit with a serrated knife.
  • Spread a luscious layer of pumpkin mixture on top. Add a second layer of moistened ladyfingers and another generous layer of pumpkin mixture over it.
  • Finish off each portion by generously dolloping whipped cream on top and adding a sprinkling of white chocolate. Enjoy right away or store covered in the refrigerator for up to 1 day.
