Easy pumpkin coffee cake with yellow cake mix and sweet drizzle - perfect for potlucks!
Ingredients:
  • 1 cup packed brown sugar
  • 0.75 cup chopped pecans
  • 0.25 cup melted butter
  • 2 tablespoons all-purpose flour
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground nutmeg
  • 1 (15.25 ounce) package yellow cake mix
  • 3 eggs
  • 0.5 cup confectioners' sugar
  • 0.25 cup milk, or as needed
Instructions:
  • First, preheat your oven to a toasty 350 degrees F (175 degrees C). Then, generously grease a 9x13-inch baking dish to ensure nothing sticks.
  • Combine brown sugar, pecans, butter, flour, cinnamon, cloves, and nutmeg in a bowl until a crunchy mixture forms.
  • In a separate bowl, combine yellow cake mix, pumpkin, eggs, and water until the batter is smooth. Spread half of the batter in the prepared baking dish, sprinkle with crunch mixture, then top with the remaining batter.
  • Bake in the oven preheated until a toothpick inserted comes out clean, in about 30 to 35 minutes.
  • Combine confectioners' sugar and milk in a small bowl until it reaches a pourable consistency; generously drizzle over the cake.
