Pumpkin Streusel Coffee Cake

Irresistibly spiced pumpkin cake with crunchy streusel topping, perfect for any time of day or as a fall dessert favorite.
Ingredients:
  • 1 cup Original Bisquick™ mix
  • 1 cup old-fashioned oats
  • 1/2 cup packed brown sugar
  • 1/2 cup cold butter, cut in pieces
  • 2 teaspoons pumpkin pie spice
  • 2 eggs, slightly beaten
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 2 tablespoons vegetable oil
  • 1/2 cup canned pumpkin (not pumpkin pie mix)
Instructions:
  • Preheat the oven to 350°F and generously coat a 9-inch square pan with cooking spray.
  • Combine 1 cup Bisquick™ mix with oats and brown sugar in a medium bowl. Use a fork or pastry blender to cut in cold butter until mixture is crumbly. Set aside.
  • Begin by combining 1 1/2 cups of Bisquick™ mix with pumpkin pie spice in a small bowl. Set it aside. In a medium bowl, whisk together eggs, granulated sugar, milk, oil, and pumpkin until well blended. Gradually add the Bisquick™ and spice mixture, stirring until fully incorporated. Pour the batter into a pan and top with streusel.
  • Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 20 minutes, then cut into 16 equal squares.
  • Cover loosely and store.
