Tiramisu Cheesecake Dessert

Irresistible mocha cheesecake bars perfect for sharing at potlucks.
Ingredients:
  • 2 cups crushed vanilla wafer cookies (about 60 cookies)
  • 1/3 cup butter or margarine, melted
  • 2 tablespoons whipping cream
  • 2 tablespoon instant espresso coffee granules
  • 3 packages (8 oz each) cream cheese, softened
  • 3/4 cup sugar
  • 3 eggs
  • 1 oz bittersweet baking chocolate, grated
  • Chocolate-covered espresso beans, if desired
Instructions:
  • Preheat the oven to 350°F. Line a 13x9-inch pan with foil and spray it with cooking spray. Combine crushed cookies and melted butter in a small bowl using a fork. Press the mixture into the bottom of the pan and refrigerate while you move on to the next step.
  • In a small bowl, whisk together whipping cream and coffee granules until the coffee is fully dissolved. Set aside.
  • In a large bowl, use an electric mixer to beat cream cheese on medium speed for 2 to 3 minutes until smooth and creamy, occasionally scraping the sides of the bowl. Then, on low speed, mix in sugar, eggs, and coffee mixture for about 30 seconds. Increase speed to medium and beat for another 2 minutes until well blended. Spread the cream cheese filling over the crust using a rubber spatula. Bake for 25 to 35 minutes until the center is set.
  • Chill in the fridge for 30 minutes. Add a sprinkle of grated chocolate or top with espresso beans. Refrigerate for about 1 hour until completely cold. To serve, cut into 6 by 4 rows using a sharp knife dipped in water.
