No-Bake Tiramisu Cheesecake

Indulgent tiramisu-style cheesecake with a decadent buttery chocolate graham cracker crust.
Ingredients:
  • 2.25 cups crushed chocolate graham crackers
  • 2 (8 ounce) packages cream cheese, softened
  • 1 (14 ounce) can sweetened condensed milk
  • 0.5 cup sour cream
  • 0.25 cup lemon juice
  • 1 (12 ounce) box vanilla wafer cookies (such as Nilla®)
  • 0.5 cup cold, brewed coffee
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and generously line a 9x13-inch pan with aluminum foil, ensuring full coverage on the sides with several inches overhanging on each end.
  • Combine graham crackers and butter in a bowl until crackers are evenly moistened. Press mixture firmly into the prepared pan.
  • Bake in a warm oven until set, approximately 12 minutes. Allow it to cool.
  • Whip cream cheese in a bowl with an electric mixer until light and fluffy. Incorporate sweetened condensed milk by continuing to beat. Mix in sour cream and lemon juice. Refrigerate for 20 minutes until chilled.
  • - Dip vanilla wafer cookies in brewed coffee for a few seconds, then place with a 1/2 inch space between each on the cooled crust. Spread 1/3 of the cream cheese mixture over the cookies. Repeat layering process two more times with cookies and cream cheese mixture.
  • Chill in the fridge until the center is firm, about 2 1/2 to 3 hours.
