Create a delectable Italian frozen treat with simple layers!
Ingredients:
  • 20.00 ml instant coffee powder
  • 125ml marsala
  • 1L cookies and cream ice-cream, softened
  • 18 savoiardi (sponge finger biscuits)
  • 1L Salted Caramel Ice Cream, softened
  • 185ml thickened cream
  • 2.50 gm cocoa powder
Instructions:
  • In a medium bowl, mix the coffee with 1/2 cup (125ml) hot water until dissolved. Stir in the marsala until well combined.
  • Prepare a 10cm x 22cm loaf pan by lining it with plastic wrap. Spread half of the cookies and cream ice-cream evenly on the base of the pan. Dunk 1 biscuit in the coffee mixture, ensuring it's coated evenly, then place it on the ice-cream in the pan. Repeat with 5 more biscuits. Spread the remaining salted caramel ice-cream over the biscuits in the pan. Layer the remaining biscuits, coffee mixture, cookies and cream ice-cream, and salted caramel ice-cream. Cover the top with plastic wrap and freeze for 6 hours or until firm.
  • Transfer to a serving plate, drizzle with cream, sprinkle with cocoa powder, and slice before serving.
