Indulge in an exquisite Italian feast with loved ones.
Ingredients:
  • 20.00 ml instant espresso coffee powder
  • 250.00 gm hot water
  • 4 egg yolks
  • 107.50 gm caster sugar
  • 500g mascarpone cheese
  • 40.00 ml Kahlua Mocha liqueur
  • 10 sponge finger biscuits
  • Dark chocolate curls (see tip), to serve
Instructions:
  • Prepare a 6.5cm-deep, 12.5cm x 20cm loaf pan by greasing it and lining the base and sides with baking paper, ensuring there is a 5cm overhang at the long ends.
  • In a shallow dish, mix the coffee and hot water until the coffee dissolves. Let it cool.
  • Using an electric mixer, beat egg yolks and sugar for 5 minutes until they are pale and creamy. Add mascarpone and liqueur, and beat on low speed until just combined. Be careful not to overmix.
  • Smooth one-third of the decadent mascarpone mixture onto the bottom of the pan. Indulge each of the 5 biscuits in the rich coffee mix, one by one, ensuring they are fully soaked. Arrange them in a single, tempting layer over the mascarpone. Build upon this exquisite base with more layers, culminating in a final lavish spread of the remaining mascarpone. Embrace the creation with plastic wrap and foil, allowing it to mature in the frosty depths of the freezer until it achieves its full glory.
  • Allow to soften at room temperature for 5 minutes then gently transfer onto a plate. Garnish with chocolate curls and enjoy.
