No-cook tiramisu cake

No-bake Italian tiramisu cake with a luscious condensed milk base.
Ingredients:
  • 450g pkt Make at Home Double Sponge Unfilled Cake, split
  • 12.00 gm gelatine powder
  • 2½ tbsp boiling water
  • 750g cream cheese, softened
  • 395g can sweetened condensed milk
  • 8.80 gm vanilla extract
  • 250ml coffee
  • Whipped cream, to serve
  • 2.50 gm cocoa powder
Instructions:
  • Prepare your 20cm round springform pan by lining the base and sides with baking paper. Cut two 20cm discs from the cake.
  • In a heatproof jug, gently sprinkle gelatine over boiling water. Stir until completely dissolved, then allow to cool slightly.
  • Use an electric mixer to whip the cream cheese in a bowl until smooth. Slowly incorporate the condensed milk and vanilla until the mixture thickens. Gradually add and mix in the gelatine mixture.
  • Place 1 cake disc at the base of the prepared pan. Drizzle half of the coffee over the cake. Pour half of the cream cheese mixture on top. Add the remaining cake disc followed by the leftover coffee. Gently pour a portion of the remaining cream cheese mixture over the cake. Chill in the fridge.
  • Chill the remaining cream cheese mixture until slightly firm, around 20-30 minutes. Scoop it into a piping bag with a 2cm plain nozzle and decorate the cake. Refrigerate for 4 hours or overnight until firm. Place on a serving plate, coat the sides with whipped cream, and sprinkle with cocoa powder.
