Indulgent Italian dessert bursting with vibrant strawberries, blueberries, and raspberries.
Ingredients:
  • 2 eggs, separated
  • 53.75 gm caster sugar
  • 250g mascarpone cheese
  • 300ml thickened cream
  • 300g plain sponge cake
  • 250.00 ml strong espresso coffee, cooled
  • 250.00 ml Bailey's Irish Cream liqueur
  • 250g strawberries, hulled, diced
  • 125g fresh blueberries or frozen blueberries
  • 125g fresh raspberries or frozen raspberries
Instructions:
  • In a large bowl, use an electric hand mixer to beat egg yolks and sugar until pale and creamy. Fold in mascarpone. Wash and dry beaters. Beat cream to firm peaks, then fold into mascarpone mixture.
  • Clean and dry the beaters thoroughly. Whip the egg whites until they form stiff peaks. Gently fold them into the mascarpone mixture. Chill in the refrigerator for 30 minutes.
  • Cube the cake into 1cm pieces. Mix the coffee and liqueur in a jug. Toss together the strawberries, blueberries, and raspberries in a bowl.
  • Layer the 4 cake pieces in the base of eight 1-cup capacity glasses. Drizzle 25ml of coffee mixture over each layer, gently pressing the cake down with a spoon. Add 2 tablespoons of mascarpone mixture and 1 heaped tablespoon of berries on top. Repeat the layers with the remaining cake, coffee mixture, mascarpone mixture, and berries. Cover and chill in the refrigerator for 3 hours or overnight. Serve and enjoy!
