Classic Tiramisu with Tia Maria liqueur is a crowd favorite!
Ingredients:
  • 250ml (1 cup) strong espresso coffee
  • 80ml (1/3 cup) Tia Maria liqueur
  • 16 savoiardi (sponge finger biscuits)
  • 2 eggs, separated
  • 55g (1/4 cup) caster sugar
  • 1 x 250g tub mascarpone
  • Shaved dark chocolate, to serve
Instructions:
  • Mix coffee and Tia Maria in a bowl. Dip one biscuit at a time into the mixture and line the sides of four 375ml (1 1/2-cup) serving glasses. Finally, drizzle the remaining coffee mixture over the biscuits.
  • In a medium bowl, use an electric beater to whip the egg yolks and sugar until thick and creamy. Mix in the mascarpone until well combined.
  • Whisk egg whites until soft peaks form, then gently fold half into mascarpone mixture. Carefully fold in the rest of the egg whites until combined. Divide mixture among glasses, cover with plastic wrap, and chill in the fridge for 6 hours.
  • Garnish with decadent chocolate before serving.
