Ingredients:
  • 375.00 ml plain flour
  • 215.00 gm caster sugar
  • 65.00 gm cocoa powder
  • 4.00 gm baking powder
  • Salt
  • 1 egg, beaten
  • 125.00 gm water
  • 128.75 gm milk
  • 1 - 2 tsp instant coffee
  • 115.00 gm vegetable oil
Instructions:
  • Preheat the oven to 180C / 350F (160C fan-forced) and prepare a 12-hole muffin tray by lining it with paper cases.
  • In a large mixing bowl, use a wooden spoon to blend together flour, sugar, cocoa, baking powder, and a pinch of salt until smooth and lump-free.
  • First, mix the instant coffee in water until dissolved. Then, add the coffee mixture, milk, vegetable oil, and egg to the dry ingredients. Carefully fold everything together until just combined, being careful not to overmix.
  • Gently test the consistency of the mixture by lifting it with a wooden spoon over the bowl. It should flow back slowly. Adjust the texture as needed: if too dry, add a dash more milk; if too runny, sprinkle in more sugar or flour based on your desired sweetness level.
  • Fill the cases to 2/3 - 3/4 full with the mixture. Bake in the oven for 25 minutes or until a skewer inserted in the center comes out clean.
