Indulge in a delightful peach coffee cake with fresh peaches from your backyard or local store.
Ingredients:
  • 0.5 cup butter, softened
  • 2 eggs, lightly beaten
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 4 cups peeled, pitted and sliced peaches
  • 1/4 cup flour
  • 1/4 cup sugar
  • 1/4 cup chopped pecans
  • 1 teaspoon ground cinnamon
  • 3 tablespoons cold unsalted butter
Instructions:
  • Preheat your oven to 325°F (165°C) and generously grease and flour a 9x13-inch baking pan.
  • Prepare a delicious coffee cake by combining sugar and butter in a large bowl using an electric mixer. Add sour cream, eggs, and vanilla, then mix in flour, baking powder, baking soda, and salt until well combined. Spread half of the batter in the baking pan, layer with peaches, and top with the remaining batter.
  • Prepare the topping by combining flour, sugar, pecans, and cinnamon in a small bowl. Add cold butter and cut it in using two knives or a pastry blender until the mixture resembles coarse crumbs. Sprinkle the topping evenly over the batter.
  • Bake in the preheated oven for 45 minutes or until a knife inserted in the center comes out clean.
